Warmth


This pasta is warmth. In more than just one way. It’s heat comes from Calabrian chilis but the sun dried tomatoes bring a warmth that isn’t tangible. This kind of warmth is reminiscent of sunny days, swaying green trees, blue waters, vacations, ripening lemons. This pasta manages to absolutely transport you to summer. It’s spicy, herby, slightly sweet packed full of quality olive oil, garlic, and basil. This pasta is going to be your go to anytime you want to escape the gloomy days.


This meal comes together in just half an hour and is absolutely amazing. It has tons of flavor without much of the effort. As long as you’ve got a bottle of garlic chili spread and sundried tomatoes you can crank this out for a quick dinner full of umami.


Calabrian chili spread- I use the Good & Gather tomato, garlic, and calabrian chili spread for this dish. It’s got gorgeous color and flavor. It’s spicy, sweet and absolutely wonderful for a quick sauce.


Sun dried Tomatoes- Sun dried tomatoes are brimming with lots of amazing flavor. Sweet, salt, and bursting with umami, these tomatoes are a great addition to any vegan or vegetarian pasta dish.


Olive Oil- Every amazing pasta dish begins with good quality olive oil. The basis of this oil will create the taste of the sauce. The flavors that are the foundation of the olive oil will in turn affect the overall taste of the pasta dish!

Ingredients

  • 8-9 ounces of spaghetti
  • 1 shallot
  • 2-3 garlic cloves
  • ¼ cup olive oil
  • ½ cup cherry tomatoes
  • 1 jar of garlic chili spread
  • ½ jar of sundried tomatoes
  • 2-3 tablespoons chili flakes
  • Garlic salt to taste
  • Pepper to taste
  • Half a lemon
  • Shredded Mozzarella cheese
  • Basil for garnish
  • ½ tsp italian herbs

Instructions

  1. Begin by boiling your spaghetti to al dente. Drain and set aside.
  2. In a heated pot pour in your olive oil, your cut up shallot, and minced garlic and saute until fragrant.
  3. Add in your cherry tomatoes and saute until the juices are released. Add in your cooked spaghetti your garlic chili spread, sun dried tomatoes, lemon juice, chili flakes, garlic salt, italian herbs and pepper.
  4. Bring together until the noodles are coated and saucy. Add on your mozzarella, basil to garnish, and enjoy!
