As the holiday of love approaches and an assortment of desserts flood the isles of the stores, there is one particular dessert that encapsulates Valentine’s Day- chocolate covered strawberries. While chocolate covered strawberries are amazing, these cookies might just be comparable in taste. Delicious gooey chocolate and freeze dried strawberries come together on the softest, yet crunchiest cookie. These come together in half an hour making your Valentine's Day wonderfully romantic and incredibly delicious.



Are you ready to recreate chocolate covered strawberries in the most incredible cookie dough? These cookies are so easy to bring together if you just have a couple of key ingredients and they’re perfect for Valentine’s day. Easy to throw together while you’re making your loved one a meal and absolutely amazing served along with ice cream or actual chocolate covered strawberries! Get ready for the sweetest, gooiest cookie that will blow your taste buds away!



Softened Butter- You want to make sure your butter is softened enough to make an impression if you press your finger into it but it shouldn't be melted or greasy. The state of your butter can make a difference on the thickness or chewiness of your final cookie. A greasy half melted butter will have less fluffiness! I like to soften butter by running a bowl under hot water and letting the butter sit under the bowl until it reaches room temperature!



Chocolate- Baking chocolate chips, and wafers are usually great but for this particular cookie i wanted absolutely gooey melty chocolate to recreate the liquid fondue style of dipped strawberries which is why chopped Ghiradelli chocolate is the BEST. I used 70% chocolate since I think the darker chocolate pairs well with the sweet tang of strawberries but semi sweet or even milk would go well!



Freeze Dried Strawberries- It’s always good to have freeze dried strawberries on hand, they’re incredibly easy to add into anything! Especially this cookie dough because they effortlessly add the sweet berry taste which makes this cookie so perfectly reminiscent of chocolate covered strawberries! I love Natierra’s organic but any freeze dried strawberry should do! I add them into the dough but mix them using my stand mixer’s paddle attachment which breaks them down in size if you’re using a hand mixer or a spatula just make sure there aren't very large pieces of strawberries in the final dough!



Chocolate Covered Strawberry Cookies

Ingredients

  • ½ cup softened butter
  • 1 cup brown sugar
  • ½ cup white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ¼ cup flour
  • ½ tsp baking soda
  • Pinch of salt
  • 1 Ghiradelli baking bar 70% dark chocolate (Or semi sweet chocolate bar Guittard)
  • 1 cup organic freeze dried strawberries plus more for decoration

Instructions

  1. Begin by setting your oven to 350 degrees. Soften your butter at room temperature and mix it with your sugars until just combined.
  2. Whisk in your egg and vanilla extract until it comes together.
  3. Sift in your flour, baking soda, and salt and mix until the dough just comes together, being careful not to overmix.
  4. Add in ¾ of your chopped chocolate bar and freeze dried strawberries and mix!
  5. Scoop your batter out and roll them into balls, placing extra chocolate and strawberries on top for decoration and bake for 10-12 minutes depending on your oven. Let them cool for 2-3 minutes before digging in!
