Passionfruit Carrot Old Fashioned Donuts

Chapter Eleven

An Unforgettable Bite

This cakey, almost fudgey, old fashioned donut is intensely unique in its flavors. Passion fruit, carrot, and vanilla all come together to create an unforgettable bite; sweet, zesty, earthy, with a texture that's unlike any donut you’ve had before. This donut almost melts in your mouth, and the syrupy goodness of its icing will have you craving this sweet all day long.

I have to attribute this donut's uniqueness to the Confiture Parisienne jam, it's one of a kind and it sparked my inspiration for turning its flavors into old fashioned donuts! Old fashioned donuts are a personal favorite of mine, I love how cakey and dense they are, and these ones are so incredible for those reasons in particular.

Confiture Parisienne Jam- This jam is the star of the show here, its flavors are unbelievable and it's an easy way to make a dessert that's out of the ordinary just from something easily accessible and bottled up.

All Purpose Flour- Normally old fashioned donuts are made with cake flour, but I wanted this recipe to be usable with household pantry items. Just make sure to add in the cornstarch and the texture is pretty much the same!

Sour Cream- Sour cream is an essential part of old fashioned donuts, its developed flavors and fermentation creates that incredible zing that is most associated with donuts!

Ingredients

Old Fashioned Donuts:

  • 1 cup sugar
  • 4 tbsp unsalted butter (room temp)
  • 3 large egg yolks
  • 2 ¾ cups all purpose flour
  • 1 ½ tsp baking powder
  • 1 tbsp cornstarch
  • ½ tsp kosher salt
  • 1 tbsp vanilla bean paste
  • ¾ cup sour cream

Passionfruit Icing:

  • 2 cups powdered sugar
  • ½ cup Confiture Parisienne Passionfruit jam
  • 3-4 tbsp milk

Instructions

Old Fashioned Donuts:

  1. Begin by fixing the paddle attachment onto your kitchenaid and beating together the sugar and butter.
  2. Once the texture is sandy add in your egg yolks and vanilla bean paste and mix until combined.
  3. Sift together your flour, baking powder, and cornstarch and pour it in one cup at a time alternating with the sour cream.
  4. Mix on a low setting until the dough is combined, it shouldn't be too sticky but if it is, add a tablespoon of flour. Let it rest in the fridge for up to an hour!
  5. Heat your oil to 365 degrees, making sure that it doesn't exceed 380 degrees, and fry your donuts until they're golden brown.

Passionfruit Icing:

  1. Mix together a cup of the powdered sugar with the jam and 1-2 tablespoons of milk. Whisk together and add another cup of icing with more tablespoons of milk until you reach your desired consistency.
  2. Wait until your donuts are cool to the touch before dipping them in icing and serving!
