Tart Raspberry Meet Sweet Cream



Layers of sweet cream, raspberry jam, fresh raspberries, softened butter cookies, and even more sweet cream make up this shortcake. Making this dessert delectable, easy, and absolutely gorgeous.



This dessert, like my mousse, is incredibly easy and comes together in minutes. With different notes of creaminess and sour, tart, sweetness this dessert delivers on creativity, ease, taste, and looks. Adjust it as you need for your guests, yourself, or based on what you have at home. This dessert is meant for its easy and quick 15 minute preparation!




Cookie or Cake?- The beauty of this dessert is that it's supposed to make your life easier so just try to use your household items or whichever you prefer. Any type of butter cookie will do the job, especially after setting with the cream, but pound cake will give you that extra decadence in this shortcake.


Raspberries- Since the focus of this dessert is the raspberry I like to add fresh raspberries in between the layers and not just as a garnish. Alternatively if you have raspberry powder instead of as a garnish sprinkle you can also whip it into your cream to have raspberry cream!


Decorating- Like I previously mentioned, raspberry powder is perfect as a sprinkling garnish, along with mint, and more fresh raspberries, it gives a striking long that is both effortless and beautiful.


Jars- I also use these jars in my mousse recipe, they are about 3-4 inches tall and 2 inches wide and this recipe makes about 4-5 so keep that in mind when filling your jars! You can also always adjust the recipe to make more as needed!

Ingredients

  • ½-¾ cup jam
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 cup lightly crushed butter cookies or leftover pound cake
  • Fresh raspberries

Optional:

  • Mint
  • Raspberry powder

Instructions

  1. Begin by whipping your cream and sugar until you reach stiff peaks.
  2. Layer your jars by first piping in your cream as your base, next add a layer of raspberry jam.
  3. Place your slightly crushed butter cookies or pound cake next, I like the bigger chunks as your whipped cream will soak in creating soft layers in your shortcake.
  4. Place fresh strawberries and pipe on your next layer of cream, and repeat until you fill your serving jar.
  5. Garnish with more cream, raspberries, mint, and a sprinkle of raspberry powder! Set them in your fridge for at least an hour, and enjoy!
