These truffles are everything a truffle should be. Fudgy, decadent, delicious, brimming with chocolate and berry goodness. With a crunchy shell and a center that literally melts in your mouth, this truffle will be your go to for parties and gifts. All while being devoid of any animal products. Just like it should be.


These vegan truffles will be your go to once you try them, they taste like something out of your favorite chocolate shop. They taste wonderfully divine, coconut plays with raspberry in a bed of deep chocolate and comes together for the most unforgettable taste. This recipe combines baking chocolate and your canned or jarred pantry items to make the most decadent and delicious desserts. These truffles come together so easily and can be decorated to your taste for the prettiest little treats!




Hu’s Baking Chocolate- Hu’s is my absolute favorite chocolate, it’s incredible not only is it vegan, paleon, and refined sugar free but it’s also the best dark chocolate I’ve ever had. So it's no surprise they were my go to for this recipe. When making vegan or dark chocolate desserts the taste of the chocolate is vital for the overall taste of the dessert despite any mix-ins. Which is why this baking chocolate is an absolute must for these truffles.


Coconut Sweetened Condensed Milk- Coconut sweetened condensed milk is a game changer. It pretty much inspired this whole recipe. It’s pretty spectacular, while the texture is a little different than traditional sweetened condensed milk but it keeps the same consistency in the desserts it’s used for. If you can’t find any you can make your own by heating  a can of coconut milk with ½ cup sugar over a stove until it thickens. Let it cool before using in any recipes.


Raspberry Jam- Raspberry jam is a key component in this truffle because it adds a lighter, fruity flavor with the richness of the chocolate. Just by adding ¼ cup of your favorite jam you can elevate the complexity of this truffle and make it spectacular!



Vegan Raspberry Coconut Truffles

Ingredients

  • 6 ounces Hu’s baking chocolate
  • 4 tbsp shredded coconut
  • 7.4 ounces coconut sweetened condensed milk
  • ¼ cup raspberry jam
  • 6 ounces Hu’s baking chocolate for coating
  • 1 tbsp coconut oil

Instructions

  1. Begin by melting the chocolate and sweetened condensed milk in the microwave in 30 second increments, mixing with a spoon in between, until the mixture fully comes together into a pudding-like texture.
  2. Place this mixture in the fridge for 4-6 hours or preferably overnight until its a moldable texture.
  3. Once you can roll this mixture into balls, let them chill in the fridge again for up to an hour while you melt your baking chocolate.
  4. Melt the coating chocolate with your coconut oil in the microwave again with 20 second bursts, mixing until it's smooth.
  5. Dip each ball in the melted chocolate and leave it to harden, decorate with more chocolate, shredded coconut, and freeze dried raspberries before enjoying!
