A bite into this cookie is akin to a sip of a chai tea latte, to a buttery fall flavored dessert, to a crisp morning, and warm cinnamon. This cookie is incredible, and you may become addicted after one bite. It’s absolutely scrumptious and brings together all your favorite flavors from a chai into a warm gooey buttery cookie with both white and dulcey chocolate.


This cookie recipe is seriously amazing, I know everytime I obsess over my cookies but this one seriously is absolutely incredible. If you like any flavors of chai, fall, or any apple dessert this cookie is perfect for you. It brings all those warm flavors to you way past the holiday season anytime you want to reminisce.




Dulcey Chocolate- Dulcey chocolate is a caramelized white chocolate sold by Valrhona that is truly mind blowing. The toasted flavors are reminiscent of a toffee shortbread and perfectly fits into the flavor profile of this cookie!



Chai Seasonings- The spices brought together to recreate chai consist of ground cinnamon, clove, cardamom, allspice, and apple pie spice. These spices together will create the perfect cup of chai in your cookie dough! The apple pie spice is just a mixture of nutmeg, cinnamon, and clove and is amazing in this recipe but not necessary if you can’t get ahold of it.



Browned Butter- Preheat your pot, and place your stick of butter in it. Whisking continuously as it becomes frothy and you see browned bits starting to float and appear within the pot. You can stop before the color becomes too dark and the butter can continue to brown even out of the heated pot. Make sure to pour in all the bits when you transfer to your mixing bowl.

Ingredients

  • ½ cup browned butter
  • 1 cup brown sugar
  • ½ cup white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ¼ cup all purpose flour
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp apple pie spice
  • ½ tsp cardamom
  • ⅛ tsp ground cloves
  • ⅛ tsp allspice
  • ½ cup white chocolate chips
  • ¼ cup dulcey chocolate

Instructions

  1. Begin by preheating your oven to 350 degrees.
  2. Brown your butter by placing your stick in your heated pot and mix continuously until it becomes frothy and the color begins to change. See notes.
  3. Pour your brown butter into your mixing bowl and let it cool slightly before adding your sugars and beating them together.
  4. Next add in your egg and vanilla extract, beating until a smooth mixture comes together.
  5. Sift in your flour, baking soda, and all your dry spices and mix until your dough forms.
  6. Fold in your chocolate and cool in the fridge for at least half an hour.
  7. Scoop onto your prepared baking sheet, press in any additional chocolate into the dough balls, and bake for 10-12 minutes or until golden brown around the edges. Let it cool slightly before enjoying them!
